INGREDIENTS :
Flying Kola Fish - 1/2 kg Wings cut and gut cleaned.Cut into round big pieces for the sauce.
Sea salt and Turmeric for washing the fish.
Dark Soy sauce - 10 ml
Weikfield Chilli Vinegar - 10 ml
Green Chilli Sauce - 4 tbsp
Tomato Ketchup - 2 tbsp
Barbeque Sauce - 20 ml
Mixed herbs - 1 tbsp
Maida - 50 grams
Corn flour - 25 grams
Coconut Oil - 100ml
DIRECTIONS :
Mix maida and corn starch and make a thick batter with no lumps.Fry the Kola fish dipped in the batter.
Donot add egg to these exotic varieties of ocean fish since they have high albumin content and they can cook without sticking in the pan,if cooked in proper way.
Donot add soda salt to the batter since it will cause sponging of the fish and excess oil absorbtion making it transparent.
Fry on both sides for 10 minutes.
In a pan mix soy sauce,barbeque sauce,green chilli sauce, chilli.vinegar,tomato ketchup,mixed herbs.Add 50 ml of water and heat the pan for 5 minutes in low flame.The mixture gives out bubbles.
Add the fried fish to the sauce.Turn off the flame.
Donot add ajinomoto or ginger garlic paste as it will change the flavour.
Flying Fish in Black Sauce is ready.Serve with cut red apples and jasmine rice.
