Ingredients

1 kg Bitter gourd
Black Tamarind 1 lemon size to reduce the bitterness
1 White onion
Cherry tomatoes small 10 nos

Curry leaves 10 nos
1 piece Mango ginger -
1/2 block Soft Cane jaggery -
1 tbsp Fenugreek Powder -
1 tbsp Amchur Powder -
1 tbsp Chilli powder -
Salt to taste
1 tbsp Coriander Powder -
2 tbsp Turmeric Powder
4 tbsp Sea salt -
100 gms Butter -
2 tbsp Mustard Dhal Mix -
Curry leaves - 10 nos
1 tsp Asafoetida
Cooking Instructions
Step 1
Remove the seeds and cut the bitter gourd into thin slices.Soak in water with turmeric powder and seasalt for 10 minutes to remove the bitterness.Drain.
Step 2
Heat butter in a pan and fry the bitter gourd in batches untill slightly crisp for 2 minutes.Set aside
Step 3
In a kadai add Mustard dhal mix to butter,curry leaves.Wash the mango ginger and cut into thin slices.Add to butter and fry.
Step 4
Cut the white onions into cubes and grind it into a smooth paste.Add the paste to the kadai.Close and cook for 2 mins.Add cherry tomatoes,soft cane jaggery and Black Tamarind.Add the Bitter gourd.Close and cook for 15 minutes.
Step 5
Heat butter in a small seasoning pan and add chilli powder,amchur powder,fenugreek powder,asafoetida,fennel seeds in low flame.Add to the recipe.
Step 6
Serve hot with pongal rice
