Sri Padma Elephant Foot Yam Chips

INGREDIENTS :
Elephant Foot Yam of Gajendra yellow variety will be good for kaara kuzhambu,Puli kuzhambu.
Of Kusum white variety will be good for lehiyams and powders.
We take Shree Padma variety of Orange colour - 1 kg
Rice Bran Oil - 300 ml
Salt and turmeric water or Buttermilk
Dried Herbs - Oregano and Rosemary
Onion Powder
Maida - 50 gms
Ajinomoto - 2 tbsp
Pepper - 2 tbsp

DIRECTIONS :
Soak the Yam in hot water for 1 hour before processing.Let the mud sit down.Scrape the outer skin of the yam and wash again.

Using a bread knife,cut the yam into thin slices horizontally and vertically like a bread slice.Soak the slices in buttermilk for best results.Yam might start itching your tongue if not properly cooked.

After soaking for 1 hour,drain and keep in freezer for another 1 hour.

Dust with Maida to remove moisture and deep fry in hot oil in high flame.Fry for 5 minutes each side.Set in a plate.

Add Dried herbs,Onion powder and Ajinomoto and mix well.

Serve with White Double long Basmathi Rice.Top with Fried oil and pepper.
