Amazon's Pearl Spot Fish Soup with Apricots


Ingredients:

Karimeen/Pearl spot fish 5 pieces - cut along with head.false gills and contents removed.scales removed along with fins.

Sooji Rava - 100 grams

Egg beaten - 2

White onion - 2 big sized sliced into springs.

Green Beefsteak tomatoes - 2 sliced into strings.

Leeks - 2 stem chopped
Coconut oil - 300 ml

Serrano Green Chillies - 4 split into 4
Gamthi Curry leaves - 10 thinly sliced

Brown Mustard seeds - 1 tbsp

Kasuri Methi - 4 tbsp

Amazon's pinecone bitter shampoo ginger roots - 4 pieces washed well and chopped.
Black rock salt - 2 tbsp

Apricots Preparation - 
Apricots - 2
Alfalfa honey - 4 dollop
Ginger Candy/Inji Murappa - 1 big cube
Apple mint - 10 leaves

Take 2 Apricots and get peeled.
Smash with Alfalfa honey 4 dollop.
Smash the Ginger Candy finely and add to the mixture.
Directions :

Wash the Pearl spot fish and make cuts inbetween for embossing.Dip in egg batter and Coat with rava.

In a pan add coconut oil and fry the Pearl spot fish for 2 minutes on both sides.Set aside.

In a kadai add oil and add gamthi curry leaves,brown mustard seeds,whiteonion,Serrano green chillies,leaks and green Beefsteak tomatoes one by one to fry.Fry accordingly.

Add the Amazon's special Bitter Pinecone Ginger.Do not fry as it's a Kanjamalai herb.Add black rock salt.

Add water 1 litre to boil.Boil for 15 minutes untill thicken.Switch off the flame and Add the Kasuri Methi,Close with a glass lid.Wait for 10 minutes untill flavour condenses and oil separates.

In a serving bowl add one rava fried Pearl Spot fish.Top with the Amazon's special soup mixture upto the brim.Add the Apricot Ginger Candy mix on top.Garnish with Apple mint.

Amazon's Pearl Spot Fish soup with Apricots is ready to serve.
