Asiatic Sardines with Lobia Beans and Red Cow Pea Brahmi salad

Ingredients :

Sardines/Mathi fish : 10 cleaned and rubbed in sand stone.

Spirit Vinegar - a little

Asiatic Pennywort Brahmi Leaves - 1 bunch plucked.

Diamond crystal Kosher Salt - 2 tbsp

Chives - 10 chopped

Longor Red Shallots - 10 chopped

Kettle river giant garlic - 1 peeled and chopped

Lobia beans - 20 nos.Chopped into small round pieces.

Brown Cow Pea - 1 handfull boiled to soft.Donot mash.
Everest Rajma Masala - 4 tbsp

Saffola rice bran oil - 300 ml

Directions :

Wash the sardines fish.Place in an idli cooker.Sprinkle some spirit Vinegar and diamond koscher salt on top.Steam in an idli cooker along for 10 minutes.

In a pan add 100 ml of oil and deep fry the Longor Red Shallots and kettle river giant garlic.Take it in a plate.

In a pan heat 100 ml of oil and add chopped lobia beans.Still well untill browning cook for 10 minutes.Cover and simmer for 10 minutes.

When oil separates,add rajma masala and diamond Kosher salt.Fry untill masala mixed well.Add the boiled Red Cow pea.Mix well and switch off.

In a serving plate spread the cooked Red Cow pea and Lobia beans.Add the boiled Sardines fish on the top.Add the topping of fried longor Shallots and Kettle River Garlic.Garnish with Brahmi leaves and Chives.

Asiatic Sardines with Lobia Beans and Red Cow Pea Brahmi salad is ready to serve.
