INGREDIENTS :
Silver Pomfret - 1 priced at 4000 per kilogram of West African CFA Franc of Cote De Ivory
Saffola Safflower oil - 100 ml
Maida Cornflower mix 2 : 1 - for coating
Italian Garlic - 1 bulb
Chives - 1 small bunch
White Pepper Powder - 1 tbsp
Flake salt - 2 tbsp
Chilli Flakes - 2 tbsp
Oregano - 2 tbsp
1 egg
1 Sweet lime Mosambi
DIRECTIONS :
Cut the pomfret remove the fins and gills .Wash the pomfret.Cut it into two halves fillets without cutting down it's triangular shape.
In a mixing bowl add chopped Italian garlic,white pepper powder,chilli flakes,oregano,flake salt.Add one beaten egg.Pour the mixture onto both sides of the Pomfret fillets.
Dust over maida corn starch mixture for setting .Shallow fry in a pan for 10 minutes each side in medium flame.
Serve with thinly sliced sweet lime and chives.Sprinkle flake salt on top.
