West Indian Pumpkin Masiyal

 

Anti Inflammatory

Ingredients

1 kg sweet yellow pumpkin

10 tbsp sugar

1 litre water

100 ml Sunflower oil

2 tbsp Mustard

2 tbsp Urad dhal

Bengal Gram dhal 2 tbsp

Curry leaves 20

4 tbsp Turmeric powder

2 tbsp Chat masala

4 tbsp Garam masala

2 tbsp Pepper

2 tbsp Salt

Spices Mix - Patta 1 Lavanga 4 Star Anise 2 Jathi Pathri 2

Cooking Instructions

Step 1

Remove the skin of pumpkin.Dice into big cubes of lemon size.

Step 2

In a long bottom pan add Sunflower oil.Heat and add mustard and dhal.Add curry leaves and the spice mix.Fry for a minute untill aroma reached.

Step 3

Add in the squash cubes.Fry for 15 minutes on high flame.Add the garam masala mix and chat powder.Add pepper salt and sugar.Add 1 litre of water.Cover and cook for another 15 minutes on high flame.Stir occasionally.

Step 4

After fully cooked,if the squash is fruity,then it will melt down into a paste.If not so mash it down.

Step 5

Enjoy hot with white rice,Rotis,Dosas.
