Broiler chicken Cleopatra Arini Macaw from Vindhya Mountain Chain in Madhya Pradesh in 1kg cut into big pieces.Grown in Mc Graw Hill processed in Mohammad Pura
Sea salt and turmeric 4 tbsp
For the Frying : Oil 300 ml
Curry leaves 20 nos
For the Marinade : Ginger garlic paste 10 tbsp
Chicken 65 masala 10 tbsp
Chill sauce green and red 4 tbsp
Soy sauce 4 tbsp
Vinegar 2 tbsp
Tomato Sauce 4 tbsp
Ajinomoto 2 tbsp
Salt 2 tbsp
Pepper compound for sprinkling 4 tbsp
Pudina 10 leaves for mixing
Maida 8 tbsp
Cornflour 4 tbsp
Directions

Wash the Cleopatra chicken with salt and turmeric.Pat dry.

Marinate the chicken with Chicken 65 masala,Ginger garlic paste,salt,ajino

Add tomato sauce,green and red chilli sauce,vinegar and soy sauce.

Soak for 30 minutes upto maximum of 2 hours.Refrigerate if necessary

Mix well again and add maida and cornflour mixture.Donot add water.Soak for another 30 minutes.The water in dead chicken will give out.

Then heat oil in a pan.Mix the curry leaves and pudina to chicken.Fry it in oil with closed lid.

Simmer for 10 minutes and turn the chicken.Let it fry for another 10 minutes

Place it in tissue paper and sprinkle compound pepper.
