Wild Boar Stir Fry :
Ingredients :
Lion Wild Boar - 1/2 kg from Ayutha Padai - Look in for the Lion Mouth opening in the Meat while parted. Brown to Red Hue. Leathery Skin with middle stuffed white layer of fat and below Brown meat.
The meat will be quite tangy like tamarind if refrigerated overnight before cooking
Whole Spices - Cinnamon Clove Bay Leaf Maratti Moggu ,crushed
Pickle of Your Choice - I'm Choosing Narthangai Pickle due to its richness
Or Use cut fruit directly
Ridge Gourd - Skin Scrambled and Cut into rounds
Black Salt Crystals - 2 tbsp
Saffola Olive oil - As required
Dijon Mustard - 2 tbsp
Curry Leaves - 10
Directions :
Heat Saffola olive oil in a pan and add Dijon Mustard , Curry Leaves , crushed spices and fry for a minute.
Onions would make the dish worser..
Add ridge gourd and fry for 2 minutes.
Add Sakthi Curry Powder fry for another 2 mins.

Add the Cubed Lion Wild Boar and fry for 10 minutes.
Don't add water while frying.Or it will become jelly like cooked..
After frying, add the Narthangai Pickle and add water of 250 -500 ml .
Cover and Cook for 20 minutes untill steam.
Add Coriander or pudina leaves and switch off the flame.
Serve with baked Broad Beans 🫛 🫘
